Steel Cut Oats with Cinnamon Apple

Steel cut oats are my new favorite cozy breakfast because of their health benefits. I’ve heard they’re good for your heart and even for diabetics. I learned from my nutritionist that the complex carbs in steel cut oats break down slower than those in more-processed oats like instant oats or rolled/old fashioned oats (which most people label "healthy"). As expected, however, they take longer to cook.

Add in some healthy fats and protein (I like nuts and nut butters!) and textural toppings and you’ve got a perfect pre-workout meal for your at home HIIT days! #FlattentheCurve

Ingredients for Oats (Serves 1)

  • 1/4 cup steel cut oats

  • 1/4 cup water (for more liquidy oats, you can add up to 1/4 cup extra water)

  • 1/2 cup milk

Recipe for Oats

  1. Put all the ingredients in a saucepan over medium-high heat.

  2. Stir, then bring to a rolling boil and then drop the heat to low.

  3. Simmer for 15 minutes. Stir the mixture every 5 minutes, being sure to scrape the bottom of the saucepan to avoid any oats sticking to the bottom.

  4. The oats should be ready between 15 and 20 minutes, depending on how liquidy or thick you want your oats!

  5. Stir in any sweeteners (brown sugar, honey, etc.) and mix-ins now. I like to mash up a date and mix it in. I also love to add in cinnamon!

Top with fruit, nut butter, nuts, chia seeds, hemp seeds, dates, etc. and enjoy!

Steel Cut Oats with Stewed Apple Recipe

Ingredients for Stewed Apple (Serves 2)

  • 1 small to medium apple, diced

  • 1-2 tsp of brown sugar

  • pinch of ground cinnamon and nutmeg

  • 1/3 cup of water

Recipe for Stewed Apple

  1. Put all the ingredients in a small saucepan, and bring them up to a boil.

  2. Lower the heat and simmer with lid on for 15 minutes.

  3. Check the tenderness of the apples using a toothpick or fork. Cook/steam until desired level of softness. I prefer mine with a bit of a bite to them still.

  4. If there’s too much liquid when your apples are nearly done, remove lid and turn up the heat to let the water evaporate. Be sure to keep swirling the pan to avoid sticking/burning.

  5. Serve over top of oatmeal, granola, or maybe even VANILLA ICE CREAM?
