Brown Butter Gravy

Ingredients

  • 1/4 cup butter

  • 1/4 cup all-purpose flour

  • 2 1/2 cups broth (chicken, beef, vegetable stock all work here)

  • salt and pepper to taste

Recipe

  1. Heat the butter in a saucepan over medium heat, swirling the pan as the butter begins bubbling.

  2. Cook the butter on low until it begins to brown; you’ll see little specks that are actually the milk particles. Do not fret! Continue swirling until the butter is a deep amber color.

  3. Sprinkle in all the flour and whisk until fully incorporated.

  4. Cook on low heat (a bit higher than before) for 2-3 minutes.

  5. In a thin, steady stream, pour the broth in while stirring (with the whisk) quickly. Based on the texture, you might think you ruined it, but it’s totally fine! Keep whisking until all the broth is incorporated.

  6. Add seasonings to taste (I like adding a pinch or two of cayenne too!) and reduce the gravy to your desired texture/consistency.
