Asian-Inspired Chicken
Ingredients
1 lb chicken breast, cut into cubes
2 tbsp vegetable oil
small onion, diced
1 tsp garlic paste (or freshly minced garlic)
1/2 tsp cayenne papper
1/2 tsp paprika
1/2 tsp cumin powder
1/2 tsp salt
1 cup of water, plus 1 tbsp
1 tbsp corn starch OR 2 tbsp flour
2 tbsp soy sauce (I use La Choy brand because it has no alcohol content and is halal)
Recipe
In a large pot, saute the onions in 2 tbsp of canola oil.
Add the garlic and let it fry a little. Then add the spices and cook until fragrant.
Add the chicken along with 1 cup of water. Bring this up to a boil.
Once it’s boiling, bring the heat down to medium-low and cover with a lid. Simmer for ~15 minutes, stirring once halfway through.
Check the water level and add more or leave as is depending on preference of sauciness.
Stir in the soy sauce and taste-test for salt and spice. If you would like more heat/spice, you can add some crushed red chili flakes.
To thicken the sauce—in a small bowl, stir cold water into the corn starch/flour until it’s a smooth liquidy paste. Add this to the pot and stir until incorporated.
Bring the heat up to medium and let it thicken until you’re happy with the consistency.
Serve over rice or noodles; garnish with sesame seeds and scallions.
