Using APPLE FLOUR to Make Gluten-Free Muffins
Recently, I've been on the lookout for healthier carb options to truly replace all-purpose flour in my diet whenever I can. I never thought APPLE FLOUR would work as a replacement for cake/dessert, but lo and behold it worked.
I created this recipe video for Hearthy Foods using their very unique Apple Flour product.
Ingredients (6 muffins or 1 mini-loaf)
2/3 cup Hearthy apple flour
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
3 eggs
1/3 cup vegetable oil
2 tbsp mini chocolate chips (or 2-3 tsp sugar)

Preheat your oven to 350°F.
In a medium-size bowl, mix together the apple flour with the rest of the dry ingredients. Break apart any clumps.
In a large bowl, whisk the eggs until homogenous. Pour the oil in while whisking.
When the eggs and oil are completely incorporated, slowly fold the dry ingredients mix into the wet ingredients bowl.
Fold in the mini chocolate chips.
Line a cupcake pan with liners and use an ice cream scooper to fill up the 6 spots. Alternatively, line a mini loaf pan with parchment paper and pour the batter in, using a silicone spatula to smooth out the top.
Bake the muffins for 15 minutes OR the mini loaf for 25 minutes (until an inserted toothpick comes out clean).
Let cool completely before serving (especially the loaf).
