Ingredients

  • 1 lb boneless, skinless chicken breast cut into 1 inch cubes

  • 1/4 cup Hearthy Foods almond flour

  • 1/2 tsp cayenne pepper or black pepper

  • 1/2 tsp salt

Recipe

  1. In a large skillet, heat about 1/8” neutral vegetable oil over medium heat.

  2. In a medium-large bowl, mix together the dry ingredients. Toss the cut pieces of chicken in the mix, ensuring they are completely coated.

  3. Use a pair of tongs to place the coated pieces in the shimmering oil. Don’t over crowed the pan! Make sure each piece is set down on its side and don’t touch/move the pieces. When the coating is properly crisped up, it will release itself and will be easy to flip over.

  4. When it looks like the chicken is halfway cooked through/white (in this case, 1/2 inch), go ahead and flip the pieces. You can flip the pieces onto the remaining two sides as well if you would like to get an even golden brown on all 4 sides of each piece. In this case, rotate the pieces often to prevent the chicken from overcooking/drying out.
